ABOUT COOKING OILS

A.GENERAL A healthier cooking oil is one which is composed primarily of Monounsaturated Fatty acid (MUFA) and Polyunsaturated Fatty acid (PUFA) and is low in Saturated fatty acid.

The more processed the oil the less healthy it is. Refining involves treating with chemicals like Hexane which can lead to cancer.

Mechanically processed oils are better than chemically processed oils. Cold pressed oils retain their natural flavor, aroma and nutrients

Oils with high boiling point are suitable for deep frying while for cooking lower boiling point oils are suitable.

Oils should not be heated beyond their boiling points.

Even healthy oils can contain a lot of calories and hence moderation is the key.

C.REFINED OILS

The generic cooking term "vegetable oil" refers to a blend of a variety of oils often based on palm, corn, soybean or sunflower oils

Refined cooking oils are made by highly intensive mechanical and chemical processes to extract the oil from the seeds. This process removes the natural nutrients from the seeds and creates a final product which oxidizes easily. The oxidation factor makes these oils more likely to break down into cancer causing free radicals within the body.

In addition, many refined vegetable oils are also hydrogenated. This hydrogenation process makes them solid at room temperature so they can be sold as margarine and shortening. This hydrogenation process further damages the fatty acids in the oils, creating trans fatty acids, which are particularly dangerous to human health. Trans Fats are produced by hydrogenation of oils and have been conclusively linked to serious chronic diseases. Trans Fats increase the LDL Cholesterol( bad fat) and decrease HDL(good cholesterol). Trans Fats are not at all good for ones health. Main source of Trans Fats is processed foods.

The consumption of vegetable oils created through chemical extraction processes is linked to widespread inflammation within the body, elevated blood triglycerides, and an impaired insulin response. These oils have been linked to diabetes, cancer and heart disease in multiple studies.
